- Preheat oven to 400°F. Peel and slice sweet potato into thin slices, lengthwise.
- Place sweet potato on a baking sheet and drizzle with olive oil. Season with salt and pepper, and toss to combine. Roast for 10-15 minutes or until tender. Remove from oven and set aside.
- To assemble the sandwiches, lay the slices of bread out on a cutting board. Spread the sriracha on the bread. Layer the sweet potato slices over the cheddar cheese. Add the spinach, if using. Top with the other two slices of bread.
- In a nonstick skillet melt the butter over medium low heat. Add the sage leaves and cook until leaves are crisp and butter brown, about 3 minutes.
- Gently place the sandwiches on the skillet and grill for 2-3 minutes or until golden brown. Flip and cook on the other side until golden brown and the cheese has melted, about 2 more minutes. Serve immediately.
