Sage Butter Sweet Potato Grilled Cheese

1.5 each sweet potato | 3 tbsp butter | 6 leaf sage | 1.5 tbsp olive oil | 1.5 tbsp sriracha | 6 slice bread | 6 oz sliced cheddar cheese | pepper | salt | spinach

Prep time: 6 min | Cooking time: 19 min

  1. Preheat oven to 400°F. Peel and slice sweet potato into thin slices, lengthwise.
  2. Place sweet potato on a baking sheet and drizzle with olive oil. Season with salt and pepper, and toss to combine. Roast for 10-15 minutes or until tender. Remove from oven and set aside.
  3. To assemble the sandwiches, lay the slices of bread out on a cutting board. Spread the sriracha on the bread. Layer the sweet potato slices over the cheddar cheese. Add the spinach, if using. Top with the other two slices of bread.
  4. In a nonstick skillet melt the butter over medium low heat. Add the sage leaves and cook until leaves are crisp and butter brown, about 3 minutes.
  5. Gently place the sandwiches on the skillet and grill for 2-3 minutes or until golden brown. Flip and cook on the other side until golden brown and the cheese has melted, about 2 more minutes. Serve immediately.
